Al-Andalus gastronomy

During this period, Spanish cooking was enriched by the new three cultures techniques with different dietary standards imposed by their religions. Three ways of eating and preparing food that generated culinary diversity in the mainland. Gastronomy in Al-Andalus is known through extensive documentation, detailing the processes of cooking, food and customs associated with their consumption.
Today some of the recipes in the cuisine of Spain and Portugal have aromas and memories from the food which exercised its influence over the territory for nearly 800 years.
